MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Fried Catfish Categories: Seafood, Sauces, Herbs, Dairy, Citrus Yield: 6 Servings 1 c Mayonnaise 2 tb Lemon juice 2 cl Garlic; minced 1 1/2 ts Dijon mustard 1 ts Cajun seasoning 3/4 c Buttermilk 3/4 c White corn meal 3/4 c A-P flour 1 ts Seafood seasoning 3/4 ts Salt 1/4 ts Pepper 1/4 ts Paprika 6 Catfish fillets (6 oz ea) Oil; for deep-fat frying In a small bowl, combine the first 5 ingredients; cover and refrigerate until serving. Place buttermilk in a shallow bowl. In another shallow bowl, combine corn meal, flour, and seasonings. Dip fish in buttermilk, then coat with corn meal mixture. In a deep skillet, heat 1" oil to 375°F/190°C. Fry fillets, a few at a time, for 2 to 3 minutes on each side or until fish flakes easily with a fork. Drain on paper towels. Serve with aioli.
