MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mushroom Baghar (Dry Fried Mushrooms) Categories: Indian Yield: 1 Batch 1/2 lb Button mushrooms 4 oz Ghee or cooking oil 1 sm Onion 2 cl Garlic 1 ts Dried thyme 1 ts Dried sage 1/2 ts Ground cardamom 1 ts Salt 1/2 Lemon Preparation time: 5 minutes Cooking time: 10 minutes If you are in the habit of serving mushrooms for breakfast try this recipe as an alternative to straight sautéing in butter. It calls for a little more preparation but the spicing, particularly with the addition of herbs such as thyme and sage, brings out the flavour. Trim away any hard parts from the mushrooms, slice, and put to one side. Heat the ghee or cooking oil in a heavy frying pan. Peel and thop finely the onion and the garlic, and fry for 2 to 3 minutes until they soften, but do not allow them to brown. Stir in the thyme, sage, and ground cardamom. Add the mushrooms to the frying pan, stirring constantly to ensure that they are coated with the ghee or cooking oil. Sprinkle in the salt, then squeeze the juice of the half lemon.
