MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pohe (Flattened Rice For Breakfast) Categories: Indian Yield: 4 servings 2 c Flattened rice 4 tb Oil 1/2 ts Mustard seeds 5 Curry leaves; (karhi patta), -up to 6 1 sm Onion; finely chopped 1 sm Green chili; chopped 1/4 ts Turmeric powder 1/2 ts Salt 1 sm Potato; boiled and cut into -cubes 1/4 c Peas; thawed if frozen 2 tb Lemon juice 1/4 ts Red chili powder 2 tb Cilantro; chopped Prep time: 15 mins, Cook time: 15 mins Put flattened rice in strainer and wash under running water until it is soaked (do not over soak). Leave in strainer for draining for 10 minutes. Heat oil in frying pan over medium-high heat. Add mustard seeds and curry leaves. When seeds start to pop, add onions, green chili, turmeric powder, salt, potatoes, and peas. Cover and cook for 3 minutes (so potatoes are soft but not browned). Add flattened rice, cook for 2 to 3 minutes, stirring occasionally (taking care not to break grains). Add lemon juice and red chili powder. Cover and reduce to low heat for 2 to 3 minutes. Turn off heat and leave frying pan covered for another 5 minutes. Before serving, garnish with cilantro. Good with coffee or masala chai. Lemon pickle goes well with it.
