MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Kheera Ka Raita (Cucumber-Tomato Yogurt) Categories: Squash, Vegetables, Dairy, Chilies, Herbs Yield: 2 Cups 1 md Cucumber; peeled, seeded, - coarse shredded 1/2 sm Yellow onion; rough chopped 2 ts Kosher salt 1 ts Cumin seeds 1 1/2 c Plain, full fat yogurt 1/2 c Minced mint 2 sm Green Indian chilies; - stemmed, minced 1 lg Plum tomato; minced Toss cucumber, onion, and salt in a colander set over bowl; let drain 5-10 minutes, then squeeze dry. Heat an 8" skillet over medium-high; cook cumin until seeds pop, 1-2 minutes; grind in a spice grinder into a powder. Whisk yogurt and reserved cumin in a bowl until smooth.
